Barbecue Chicken Pizza and the Parable of the Yeast

My weekends are quiet. In fact, so quiet, that I got the edits to a manuscript back to my major professor in record time. Well before she needed them (gold star for me from me)!

My weekday nights are quiet too. There are no pranks being pulled, no shenanigans. My partner in crime is off at class, prepping for a big exam.

Today is my last day of summer. I spent the morning combing through a delightful essay I stumbled upon called "The Gender of God in the New Testament and the Spirituality of Women." Then I headed off to a dentist appointment, ran a few errands collecting red onions and gouda cheese, and watched episodes 10 and 11 of season five of Breaking Bad. I started watching the series about three weeks ago. Yeah...

Tonight promises to be full of Breaking Bad and barbecue chicken pizza. My favorite.

C-H-E-E-S-E-A-N-D-O-N-I-O-N-S
oh no
As I was warming the yeast in water and making the dough, watching it rise, I reflected on The Parable of the Yeast, which I had never read or learned before this morning...
He spoke to them another parable. The kingdom of heaven is like yeast that a woman took and mixed with three measures of wheat flour until the whole batch was leavened. (Matthew 13:33)
This parable follows The Parable of the Mustard Seed, one many of us know. Both of these parables contain nifty metaphors for God, in one God is feminine, the other God is masculine. A baker, a farmer.

Food for thought. And food for bellies.

Slow Roasted Tomatoes - Photo.a.Day

Before
After

Slow roasted goodness.

Recipe as follows:
  • Pint of grape, cherry, pear, or small Roma tomatoes. Halved.
  • Olive oil
  • Salt and pepper
  • Thyme
Preheat oven to 225*F or so. Line baking pan with a greased brown paper bag (or, if you're equipped, parchment paper). Lay out the tomatoes skin side down. Drizzle with olive oil. Season with salt, pepper, and thyme (rosemary would be lovely too!). Roast for three hours or until tomatoes are happily shriveled up but still juicy inside.

Be prepared to eat them all in one sitting!

Adapted from SmittenKitchen.

Edit 08/07: Add whole unpeeled cloves of garlic! Do it! You will not regret it.

Feeling Punchy - Photo.a.Day

Enjoying our first sip!
This photo really didn't catch the excitement of the moment.
Stir it, stir it.
Ohhhhhhhhhh yes.
Stephanie and I enjoying a lovely Thursday in Davis! KetMoRee for this fantastic punch for "people who like to rave." KetMoRee serves possibly my favorite food these days. Green curry. Sooo good.

Ingredients - Photo.a.Day

For dinner I'm making a slightly embellished version of Nigella's Tomato and Rice "Soup". It's a really simple dish, lying somewhere between Spanish rice, spaghetti, and jambalaya. Sounds a little crazy, I know.

The ingredients are:
  • 1 jar of a favorite spaghetti sauce
  • 3 cups water
  • 1 cup basmati rice (I've tried this with brown rice and it works well)
  • 2 medium zucchinis, quartered and sliced
  • 1 medium yellow onion, sliced/chopped/whatever-is-easy
  • 1 precooked chicken sausage, sliced (I use Saag's)
  • Salt and pepper (crushed red is quite lovely!) to taste
The way I make it is:
  1. With a small amount of olive oil or cooking spray, cook the onions until almost translucent over medium-high heat. Add a little salt. (3-4 minutes)
  2. Add zucchini and cook until soft but well before a golden/brown stage begins. (4-5 minutes)
  3. Add the chicken sausage and stir.
  4. Pour in the spaghetti sauce and dilute it with the three cups of water.
  5. Stir in rice and bring to a boil.
  6. Drop heat to medium-low. Cook until rice is tender, stirring occasionally to keep anything on the bottom from burning. Rice could be done in as little as 10 minutes.
  7. Add salt and pepper to taste. Serve!
It makes a lot of tastiness!

Bread!

Soooooo good. Now, I haven't had "real" bread in about two years, but I am pretty sure this is almost it. It doesn't require toasting like almost all other store-bought gf bread does, which is nice. And it really tastes fancy and rustic!

It's not that expensive in the world of gluten-free. $4.00 a loaf!

All it needs is a good tomato on top and I am in bread heaven!

Sicilian Jack

Sorry, Havarti, you are no longer my favorite cheese. Your place has been taken by Sicilian Jack! Sooooooo incredibly tasty with sun-dried tomatoes, basil, and garlic. Mmm...

Logic Boards, Cortisol, and Crab

*PHEW*

My goodness, where to start. How about Sunday night?

For my adolescence class we had a final presentation. Like everything this quarter, I had to do it at the last minute. But Sunday night Amy called me to let me know that she was going to Mishka's (the grad student hang out) to work on her presentation. I said I'd meet her there around 8 PM. So I packed up my stuff, bought a delicious raspberry French soda (Italian soda with cream -- who knew?) and opened up my MacBook Pro to finish finding articles to present. Well, the screen didn't turn on. I turned my computer on and off, tried plugging it in, didn't work. I wasn't freaking out at this point, but asked Amy if she would drive me to Target (that closes at 9) to buy a monitor. I have heard that sometimes the backlight or screen just stops working on laptops and people buy external monitors and go on with life. Well, Target was out of monitors so I splurged for a flat screen TV with a VGA input.

Amy sweetly comes up to my apartment to help me get it set up. Well... my screen doesn't appear on the TV. I play with settings, turn my computer on and off, connect and disconnect, no dice. So I figure it must be the TV. Amy had her MacBook Pro so I tried hers... and it connected right off the bat. She told me I could borrow her computer while she read her articles. I asked the good people of the MacRumor's forum what was up. A few people told me it might be an Nvidia graphic card bug, another person told me it was the logic board. Either way, my computer was doomed to be in the shop for at least 3 days.

At this point I started to panic. I had articles on my computer that I needed to print and needed Powerpoint for the presentation and, later this week, Stata. I knew my *computer* was working as I could hear it start up and turn off. Then my computer started to TALK to me. As I'd put my mouse on various icons, it would read to me what I was blindly pointing at. It was so strange... and that, additionally, freaked me out.

Amy was calm and booked an appointment for me at the Genius Bar in Sacramento for Monday afternoon and told me she would drive me. She also loaned me her computer for the night, until we had class Monday morning. I was able to re-find the articles and print them. Without her, I would have been f*cked.

So we had class on Monday (very interesting, one of many facts the law school professor who came to sit on our discussion shared was that the United States is the #1 exporter of sperm... awesome, haha), then Amy had an appointment downtown, so I went to my apartment and started reading and organizing the articles. Then we went to Sacramento and, yep, it was the logic board. They would be able to replace it by as early as Wednesday. So I parted with my computer, confident that I'd be able to work at the library.

We get back to Davis at about 3:30 or so. I run to Chipotle to get something to eat and I take about a half-hour to put myself back together. I walk to the library and... there's no Powerpoint on their computers. There is a small lab that does have it, but it is packed and there is a line. I call Stephanie to ask her for the code to the TA-office in hopes that those computers will have Powerpoint on them. No dice. Panic attack number 3 has arrived. I called my sister and told her that I was pretty sure that this was the universe's way of telling me that grad school was a bad idea. At this point (6:30 PM) there's no place to buy a Mac in town. My sister suggests I ask my neighbor, Sarah, if I can borrow hers to do the Powerpoint. And, amazingly, incredibly, Sarah loans me her computer to use until 8 AM on Tuesday. I meet up with Caitlin and we work on our presentation into the wee hours - 4 AM. I decide just to finish my notes instead of going to sleep, so I stay up until 5:30 AM. Sarah picks up her computer at 8 and I practice my presentation when I wake up at 10.

Just in case you thought maybe God or the stars or the universe wasn't playing a huge, not-funny joke on me... during my presentation (image-heavy, mind you) none of the pictures showed up. I just felt like giving up, throwing in the towel, laying my head on Adrienne's computer and sobbing. But I pushed through and just told everyone what the images were that should have shown up.

The presentation wasn't very good. Not having the images made me extremely nervous and I talked way too fast through my notes. But, and thank goodness, most peoples' presentations' images didn't show up. I was the second person to go, and about half or so of everyone who went after me had the same problem.

The presentation was over, Adrienne took us out for beer and pizza (or for us Celiacs, salad and water - haha). I went to my apartment and laid around checking my email on my iPod Touch. I had gotten an email from Brian saying that I got an 'A' in behavioral genetics. I was thrilled but couldn't really feel happy as the cortisol levels in my body were way too high. I felt a little sick at all the stress, good and BAD. I collapsed and slept for a very long time from 11 PM to about 12:30 on Wednesday.

Stephanie picked me up after her job training at about 6:30 to go get my Mac. She told me she was in the mood for seafood. As a child, I didn't like seafood and haven't tried it since I was little. As I have changed my mind on a few things lately (especially blue cheese), I told her I'd be up for trying it again. We went to Joe's Crab Shack on the Sacramento River and I tried some of her crab. It was very tasty! I am a reformed woman. I really liked the snow crab. But anything dipped in garlic and butter has to be good!

We picked up my Mac and since then everything, more or less, has been normal. I started working on my stats project on Thursday and it's a lot bigger than I thought it would be. I realized that I would have to pull an all-nighter to get it turned in before they closed the building on Friday to come home. I decided I just couldn't do another all-nighter/high-stress evening. So... *sigh*... I won't be coming home for spring break. I canceled my flight to give me extra time to work on the stats. I'm thinking of what I'm going to do this break after I'm done with my paper. I am thinking of going to Berkeley to check out the Crate and Barrel outlet and other shops. Stephanie is in town, so I may hang out with her. But for the most part I'm thinking about laying around in my apartment, catching up on pop culture, playing the Sims, and listening to music. A few bicycle rides are scheduled. I'm thinking about reading a non-academic book. But there will be plenty of sleep. Ahhh, I love sleep.

In less than two weeks, my younger sister will be here! I am so excited! I have booked a rental car and a hotel in San Francisco. There are a few places on our road trip that we want to check out but I am aiming for a chill weekend for her. She definitely needs some low-stress fun, like me!

Anywho, this was a long post. Next time I won't be so wordy... :-)

Tasty Tuesday - it's NutRageous!

Davis, CA
10:30 PM
On a Sunday

After having spent 4 hours straight on one article and one annotated bibliography, Natalie suffers minor meltdown but decides to not freak out... and instead, walk over to the Fast and Sleezy to buy chocolate and Diet Coke.

Armed with a $10 bill, keys, and a cellphone, she walks directly into the mini mart, to the refrigerator... Diet Coke *check*. Next, to the candy bars... Rolos, no. Hersheys... she wants something nutty. Snickers are boring and she eats too many Butterfingers. Love/hate relationship with the way crunchy peanut buttery substance in Butterfinger sticks to back molars.

NutRagous... that sounds good. Haven't had one of those since high school.

Full-blown meltdown avoided and able to work straight until 3:30 AM.

That is a good, under-appreciated candy bar right there. Yum.

Tasty Tuesday - Smorgasbord

Dear Blogosphere,

After a marathon of thinking (4-hour seminars are mentally exhausting!), I can't really think of a theme for today. So, I'm just going to post an assortment of thoughts, a smorgasbord, if you will.

  1. Those, above, are insanely delicious enchiladas. I love them. They almost make having Celiac Disease worth it. The surprising thing is that they come in a frozen box. (Amy's Cheese Enchiladas.)
  2. I watched Giada make Herbed Quinoa a few days ago and I think she answered my foodie prayer! I have some quinoa but didn't have any ideas. This recipe looks really good... mmm... lemon.
  3. Hanging out in the Co-op's bulk foods section last night, I decided to get some dried papaya and pineapple. So sweet.
So, those are just some random food thoughts. I hope you all had a wonderful Martin Luther King, Jr Day weekend! I'll end this post with one of my favorite quotes from the Letter from Birmingham Jail.

"Injustice anywhere is a threat to justice everywhere. We are caught in an inescapable network of mutuality, tied in a single garment of destiny. Whatever affects one directly, affects all indirectly."

Alton Brown's Gluten-Free Cookie Recipe

I might attempt to make these sometime soon...

Ingredients

  • 8 ounces unsalted butter
  • 11 ounces brown rice flour, approximately 2 cups
  • 1 1/4 ounces cornstarch, approximately 1/4 cup
  • 1/2-ounce tapioca flour, approximately 2 tablespoons
  • 1 teaspoon xanthan gum
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 2 ounces sugar, approximately 1/4 cup
  • 10 ounces light brown sugar, approximately 1 1/4 cups
  • 1 whole egg
  • 1 egg yolk
  • 2 tablespoons whole milk
  • 1 1/2 teaspoons vanilla extract
  • 12 ounces semisweet chocolate chips

Directions

Preheat the oven to 375 degrees F.
Melt the butter in a heavy-bottom medium saucepan over low heat. Once melted, pour into the bowl of a stand mixer.
In a medium bowl, sift together the rice flour, cornstarch, tapioca flour, xantham gum, salt and baking soda. Set aside.
Add both of the sugars to the bowl with the butter and using the paddle attachment, cream together on medium speed for 1 minute. Add the whole egg, egg yolk, milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Add the chocolate chips and stir to combine.
Chill the dough in the refrigerator until firm, approximately 1 hour. Shape the dough into 2-ounce balls and place on parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes, rotating the pans after 7 minutes for even baking. Remove from the oven and cool the cookies on the pans for 2 minutes. Move the cookies to a wire rack and cool completely. Store cooked cookies in an airtight container.

Tasty Tuesday - Ready Rice + Rain

Dear Blogosphere,

It is raining outside! Pouring! Oh, it makes me so happy. My windows have been opened so that I can hear the drops of water collect in puddles above the bookstore's roof. Rain is so romantic. Even if you are chronically alone. :-)

This rainstorm came after I had a little sobfest. TMI? I don't know, but the sobfest ended with me coming up with a very funny joke... one, though, not for the blogosphere's ears. I decided to listen to some music and even though the blasting-volume headphones, I hear the rain.

So, to celebrate the happiness that comes after a sobfest (the harder you fall, the higher you bounce) and the rainstorm, I decided to "cook" a comfort food. Rice. That you microwave in a pouch for 90 seconds. Mmm...

Sometimes that's all you need to make for a Tasty Tuesday.

Tasty Tuesday - Double-Yolk Eggs and Such

Dear Blogosphere,

Happy Tasty Tuesday... a little late! Ha ha. I have eaten a couple of marvelous things since I've been back... let me share.

At the Farmer's Market, I decide to give in and buy some eggs. They were from free range chickens, which is cool by me, brown... organic, etc. But when I asked for a half-dozen large eggs, the woman asked me a marvelous question: "single or double yolk?" I didn't know... what to say. You see, I'm a city girl, unaware of things like double-yolk eggs. So she recommended half and half. When I cracked one of the double-yolk eggs I was pretty thrilled to see two small-ish yolks. I'm easily excited. I made myself a plain omelette with one double-yolk egg and one single-yolk egg and it was of course very, very delicious.

The other tasty thing I made was fried polenta with pesto and garlic. It was the store bought kind, basil and garlic flavored. I fried 1/2" slices of the polenta for quite a while until both sides were crispy and brown then threw fresh minced garlic in the pan and spread pesto on top of each round. Cooked it until the garlic was absolutely amazingly fragrant, and subsequently sprinkled parmesan on top. Yummmmmmmmmmmmm.

As I have made it through my first week of my second quarter of grad school, I'm treating myself to In-n-Out for dinner then a little browsing at my local Borders.

...Then I shall return for some Endnote-figuring-out-stuffness...

Tasty Tuesday - Cheese!

Dear Blogosphere,

Today was our official Christmas at my mum's place. Early in the day we went grocery shopping for Christmas dinner. My mom also let my younger sister and I both pick a "fancy" cheese. I spotted an herb & spices havarti and Ali chose a fontina.

I love cheese and am so glad that I can eat it. If I had to ditch both gluten and dairy, I think I would die. Cheese is what keeps me going!

The herb & spices havarti was very tasty. Creamy, as usual, and I do prefer the flavored havartis over the plain. The fontina was also delicious. Soft and with a nice bite to it.

There are a few things I do miss with the gluten-free diet, though. One is the gyro at Yannis. I would get it vegetarian, which just meant pita stuffed with feta, tzatziki, tomato, and lettuce. So good. And I also miss spreading brie on a good and fluffy baguette.

But I can still indulge in feta and brie, I just have to come up with more interesting and novel ways to do it!

Hope you are all enjoying your Christmas week!

-Natalie

P.S. Speaking of gyros, if you ever, ever see gluten-free pita let me know. :-)

Tasty Tuesday - Omelets and Good News!

Dear Blogosphere,

Sleep is a wonderful thing and I am pretty sure most people don't get enough of it. I usually do. In fact, sometimes I get too much sleep. During snooze-time, your brain works through problems and figures or sorts out all the new information you gather each day. (This is why it is better to get a good night's rest before a final as opposed to pulling an all night cram session.) Sometimes these show up in dreams. Other times, you just dream of making omelets.

Omelet cooking is my latest recurring dream. It is amazing. I see myself putting a good sized serving of butter into a non-stick pan. It melts and once it gives off that browning aroma, I pour two fresh, beaten eggs into the pan. It smells like heaven. Once it is mostly set, I flip the beautiful golden, soft disc. In some dreams I add various cheese, vegetables, and even meats, but usually I just have a plain, all eggs and butter dream.

Isn't that delicious?

Anyway, the good news is...

Olive Garden now has gluten-free pasta!

Although I'm not a huge fan of Olive Garden, it is wonderful to have a new option for eating out! And it is just one more chain that has picked up on gluten-free. :-)

Until tomorrow,

Natalie
